Ingredients

  • 1 large head cauliflower
  • 4 cups water
  • salt to taste
  • 2 large onions
  • 4 tablespoons canola oil
  • fresh ground pepper to taste
  • 1 egg
  • 2 egg whites
  • 2 tablespoons wheat germ

Instructions

  1. Wash cauliflower and separate into large florets.
  2. Bring water to a boil in a large pot.
  3. Add salt and cauliflower to the boiling water and simmer uncovered for 15 minutes until tender.
  4. Drain the cauliflower and mash it.
  5. Preheat oven to 350°F (175°C).
  6. Saute diced onions in canola oil until soft and lightly browned.
  7. Combine the sautéed onions with the mashed cauliflower; add ground pepper, beaten eggs, and wheat germ.
  8. Pour the mixture into a greased 9-inch square pan.
  9. Sprinkle the top with cornflake crumbs.
  10. Bake in the preheated oven for 45 minutes until golden and set.
