Ingredients

  • 1 lb. lean ground beef
  • 3 large onions, diced
  • 1 large green pepper, chopped
  • 16 oz. stewed tomatoes
  • 1/2 cup uncooked rice
  • 1 to 2 tsp. chili powder
  • 2 tsp. salt
  • 1/4 tsp. black pepper

Instructions

  1. In a large skillet, cook ground beef until crumbly.
  2. Drain off fat.
  3. Add diced onions and chopped green pepper to the skillet.
  4. Cook until vegetables are tender.
  5. Stir in stewed tomatoes, uncooked rice, chili powder, salt, and black pepper.
  6. Mix well and pour into a 2-quart casserole dish.
