Ingredients

  • 12 oz. High Liner fish cakes
  • 10 oz. can cream of mushroom soup
  • 1 medium onion
  • 1 1/3 cups water
  • 1 teaspoon lemon juice
  • 1 1/3 cups cooked rice
  • 1/2 cup grated Cheddar cheese
  • 1/4 teaspoon salt
  • pepper
  • 1 1/2 cups fresh frozen peas

Instructions

  1. Combine cream of mushroom soup, chopped onion, water, lemon juice, salt, and pepper in a saucepan and bring to a boil.
  2. In a large casserole dish, alternate layers of the soup mixture with cooked rice and peas.
  3. Top the casserole with 6 fish cakes.
  4. Bake at 425°F (220°C) for 20 minutes.
  5. Sprinkle grated Cheddar cheese over the casserole and return to the oven for an additional 10 minutes or until the cheese is melted.
