Ingredients

  • 1 3/4 lb shredded cabbage
  • 1/2 cup sugar
  • 1/4 pod sweet pepper
  • 1/4 jar pimentos, mashed
  • 1 tablespoon salt
  • 1/8 teaspoon black pepper
  • 1/2 cup vinegar
  • 1 cup tomatoes
  • 1/8 teaspoon red pepper

Instructions

  1. Combine shredded cabbage, sugar, mashed pimentos, salt, black pepper, and red pepper in a large bowl and mix well.
  2. Add vinegar and chopped tomatoes to the mixture and stir until evenly coated.
  3. Pack the slaw into a quart jar and a half-pint jar.
  4. Refrigerate and will keep for weeks.
