Ingredients

  • 1 lb. fish fillets
  • 2 Tbsp. lemon juice
  • 1 Tbsp. margarine
  • 1 Tbsp. cornstarch
  • 1/4 tsp. pepper
  • 1 cup skim milk
  • 1/2 tsp. dried basil leaves
  • 1 Tbsp. vinegar
  • 1 Tbsp. Dijon mustard
  • 1/2 tsp. dried oregano

Instructions

  1. Place fish fillets on a nonstick baking dish.
  2. Sprinkle lemon juice over the fillets.
  3. Bake covered at 450°F for 8 to 10 minutes or until fish flakes easily.
  4. While the fish bakes, melt margarine in a small saucepan.
  5. Blend in cornstarch and pepper until smooth.
  6. Add milk and heat to a boil, stirring constantly.
  7. Boil for 1 minute.
  8. Remove from heat.
  9. Add dried basil leaves, vinegar, Dijon mustard, and dried oregano.
  10. Heat until hot, then spoon sauce over baked fish fillets.
  11. Serve immediately on a warmed platter.
