  • 5 cans tomato soup
  • 1 can V-8 vegetable juice
  • 3 cans water
  • salt to taste
  • pepper to taste
  • 8 slices fatback meat
  • 2 or more Tbsp. sugar
  • 1 envelope Lipton onion soup mix
  • 2 Tbsp. Texas Pete hot sauce
  • 2 Tbsp. Worcestershire sauce
  • 1 c. catsup

Instructions

  1. Fry fatback and remove from the pan.
  2. Fry onions in the fatback grease until they turn clear.
  3. Add tomato soup and water to the pan.
  4. Stir in sugar, onion soup mix, hot sauce, salt, pepper, and catsup.
  5. Bring the mixture to a boil.
  6. Add fish or chicken and simmer very slowly until tender.

Tips & Substitutions

For a lighter version, consider using skinless chicken instead of fish, or swap out the fatback for turkey bacon. If you prefer a thicker stew, mash some of the fish or chicken into the sauce. Adjust the spice levels by adding more or less Texas Pete hot sauce. For a fresher taste, you can add chopped fresh herbs like parsley or dill towards the end of cooking.

Serving Suggestions

Serve this hearty stew with crusty bread or over a bed of rice for a complete meal. It pairs wonderfully with a side salad, such as a Tuna Pecan Salad, to balance the richness of the stew. Consider garnishing with fresh herbs or a sprinkle of lemon juice for added brightness before serving.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm on the stove over low heat, stirring occasionally, until heated through. You can also microwave individual portions, but be sure to cover and stir to ensure even heating.
