Fish packets offer a flavorful, healthy, and easy-to-make meal with tender fish, fresh vegetables, and zesty lemon, perfect for quick weeknight dinners or outdoor grilling.

Ingredients

  • fish fillets
  • celery, cut into 1-inch pieces
  • onion, chopped or sliced
  • sliced potatoes
  • lemon juice
  • salt
  • pepper
  • butter, cut into small bits
  • cooking oil or spray

Instructions

  1. Place a 14-inch sheet of heavy-duty foil on the counter for each serving.
  2. Oil or spray the foil with cooking oil or spray.
  3. Place fish fillet(s) on the foil. Drizzle lemon juice over the fish.
  4. Cover the fillet(s) with celery, onion, sliced potatoes, salt, and small bits of butter as desired.
  5. Add small bits of butter on top of the vegetables if desired.
  6. Fold the foil to create a sealed packet.
  7. Place the foil packets on the grill over medium-low heat.
  8. Cook for 35 to 45 minutes.
  9. Open the packets carefully and serve.
