Fish-Potato Soup(Psarosoupa)
Ingredients
- 1/2 c. olive oil ⓘ
- 2 medium onions, sliced ⓘ
- 1/2 c. chopped celery ⓘ
- 3 large carrots, cubed ⓘ
- 4 medium potatoes, cubed ⓘ
- 2 c. boiling water ⓘ
- 3 1/2 c. tomatoes (1 large or 2 medium cans) ⓘ
- 3 tsp. salt ⓘ
- 4 oz. white wine ⓘ
- juice of 1/2 lemon ⓘ
- 1/4 tsp. pepper
- 2 Tbsp. chopped parsley ⓘ
- 1 3/4 lb. haddock fillets ⓘ
Instructions
- Saute onions, celery and carrots in oil until soft.
- Add potatoes, seasonings, water, tomatoes and fish (cut into 3-inch pieces).
- Cover and simmer 25 minutes.
