Fish-Potato Soup(Psarosoupa)

Ingredients

  • 1/2 c. olive oil
  • 2 medium onions, sliced
  • 1/2 c. chopped celery
  • 3 large carrots, cubed
  • 4 medium potatoes, cubed
  • 2 c. boiling water
  • 3 1/2 c. tomatoes (1 large or 2 medium cans)
  • 3 tsp. salt
  • 4 oz. white wine
  • juice of 1/2 lemon
  • 1/4 tsp. pepper
  • 2 Tbsp. chopped parsley
  • 1 3/4 lb. haddock fillets

Instructions

  1. Saute onions, celery and carrots in oil until soft.
  2. Add potatoes, seasonings, water, tomatoes and fish (cut into 3-inch pieces).
  3. Cover and simmer 25 minutes.
