Fish Tortilla Wraps

Ingredients

  • 1 pkg (6 oz) nacho cheese tortilla chips
  • 1 1/4 lbs firm white fish fillets, cut into 1-inch strips
  • 8 None flour tortillas
  • 1 large avocado, finely chopped
  • 2 medium tomatoes, finely chopped
  • 1 can (10 oz) corn kernels, drained
  • 2 tbsp chopped cilantro
  • 1 tbsp lemon juice
  • 1 tbsp vegetable or olive oil
  • None None Salsa, to serve

Instructions

  1. Preheat the oven to 350°F. Line a baking pan with foil. Finely crush tortilla chips in package. Place fish in chip package; shake gently to coat lightly. Place fish, in a single layer, on prepared pan. Spray with no stick cooking spray.
  2. Bake for 10-12 mins or until fish is golden brown and cooked through.
  3. Meanwhile, wrap tortillas in foil. Bake for 5 mins or until heated.
  4. Combine avocado, tomato, corn, cilantro, lemon juice and oil in a medium bowl. Top each tortilla with fish, avocado mixture and salsa. Roll to enclose filling. Serve.
