Fish Tortilla Wraps
Ingredients
- 1 pkg (6 oz) nacho cheese tortilla chips ⓘ
- 1 1/4 lbs firm white fish fillets, cut into 1-inch strips ⓘ
- 8 None flour tortillas ⓘ
- 1 large avocado, finely chopped ⓘ
- 2 medium tomatoes, finely chopped ⓘ
- 1 can (10 oz) corn kernels, drained ⓘ
- 2 tbsp chopped cilantro ⓘ
- 1 tbsp lemon juice ⓘ
- 1 tbsp vegetable or olive oil ⓘ
- None None Salsa, to serve ⓘ
Instructions
- Preheat the oven to 350°F. Line a baking pan with foil. Finely crush tortilla chips in package. Place fish in chip package; shake gently to coat lightly. Place fish, in a single layer, on prepared pan. Spray with no stick cooking spray.
- Bake for 10-12 mins or until fish is golden brown and cooked through.
- Meanwhile, wrap tortillas in foil. Bake for 5 mins or until heated.
- Combine avocado, tomato, corn, cilantro, lemon juice and oil in a medium bowl. Top each tortilla with fish, avocado mixture and salsa. Roll to enclose filling. Serve.
