Ingredients

  • 2 lb. fresh fish (haddock or snapper)
  • 2 limes
  • salt and pepper
  • 4 Tbsp. olive oil
  • 2 medium onions, sliced
  • 1 to 2 cloves garlic
  • 2 c. tomato puree
  • 1/2 c. water
  • 6 stuffed green olives, sliced
  • 1/2 c. capers
  • 2 pickled jalapeno chili peppers, chopped fine

Instructions

  1. Marinate the fish in lime juice, then season with salt and pepper, turning a couple of times.
  2. Remove the fish from the marinade and pat dry.
  3. Brown the fish in 4 tablespoons of olive oil, then remove from the pan.
  4. Add sliced onions and minced garlic to the pan and fry until brown.
  5. Add tomato puree, water, sliced stuffed green olives, capers, and chopped pickled jalapeno peppers; cook covered for 10 minutes.
  6. Place the fish back into the pan and spoon sauce over it.
  7. Cook for an additional 7 to 10 minutes until fish is cooked through.
