Ingredients

  • 1 1/2 lb. fresh cooked string beans
  • 1 lb. shrimp shelled, deveined, and cooked
  • 1/2 tsp. basil
  • 1/3 cup olive oil
  • 1 Tbsp. lemon juice
  • 2 cloves garlic minced
  • 1/2 red onion minced
  • 2 Tbsp. red wine vinegar
  • 1/2 tsp. anchovy paste
  • 1/2 tsp. salt

Instructions

  1. Combine string beans, garlic, onion, and shrimp in a large bowl. Toss well.
  2. Whisk together red wine vinegar, lemon juice, anchovy paste, basil, salt, and olive oil to make the dressing.
  3. Pour the dressing over the beans and shrimp mixture and toss to coat evenly.
  4. Cover the dish and let it stand at room temperature for one hour or refrigerate for up to 8 hours.
  5. Serve at room temperature and enjoy!
