A vibrant, coconut and pineapple layered dessert with creamy topping and crunchy nuts, perfect for summer gatherings or tropical-themed celebrations.

Ingredients

  • 2 boxes Salerno coconut bars
  • 8 oz cream cheese
  • 1 stick butter
  • 1/2 cup sugar
  • 1 (20 oz) can crushed pineapple, drained
  • 1 package Dream Whip or Cool Whip
  • chopped nuts
  • 1 (3 oz) red Jell-O

Instructions

  1. Make Jell-O as directed and refrigerate until syrupy or slightly set.
  2. Line a 9 x 13-inch pan with a layer of Salerno coconut bars, breaking them as needed to fill in the pan.
  3. Beat cream cheese until fluffy, then add butter and sugar, mixing well.
  4. Blend in drained crushed pineapple.
  5. Spread half of the pineapple mixture over the coconut bars in the pan.
  6. Add another layer of coconut bars and then cover with the remaining pineapple mixture.
  7. Beat the syrupy Jell-O on high speed for 10 minutes until frothy.
  8. Spread the frothy Jell-O on top of the layered ingredients.
  9. Let the dessert set in the refrigerator.
  10. Once set, top with Dream Whip or Cool Whip and sprinkle with chopped nuts.
  11. Refrigerate for 24 hours before serving.
