Ingredients

  • 4 small unpeeled tomatoes, each cut into 4 slices
  • vegetable cooking spray
  • 4 (4 oz.) flounder fillets
  • 1/4 cup fine dry bread crumbs
  • 1 tablespoon grated Parmesan cheese
  • 1 1/2 teaspoons chopped fresh dill
  • 1/4 teaspoon salt
  • 1/8 teaspoon white pepper
  • 1/8 teaspoon ground red pepper
  • 1 tablespoon margarine, melted
  • fresh dill sprigs (optional)

Instructions

  1. Place tomato slices in a 13 x 9 x 2-inch baking dish coated with cooking spray. Arrange fillets on top of tomatoes.
  2. Combine bread crumbs, grated Parmesan cheese, chopped fresh dill, salt, white pepper, and ground red pepper in a bowl.
  3. Stir in melted margarine until well combined.
  4. Sprinkle the bread crumb mixture evenly over the fillets.
  5. Bake at 425°F for 13 minutes or until the fish flakes easily when tested with a fork.
  6. Garnish with fresh dill sprigs, if desired.
