Ingredients
- 4 small unpeeled tomatoes, each cut into 4 slices ⓘ
- vegetable cooking spray ⓘ
- 4 (4 oz.) flounder fillets
- 1/4 cup fine dry bread crumbs
- 1 tablespoon grated Parmesan cheese ⓘ
- 1 1/2 teaspoons chopped fresh dill ⓘ
- 1/4 teaspoon salt ⓘ
- 1/8 teaspoon white pepper ⓘ
- 1/8 teaspoon ground red pepper
- 1 tablespoon margarine, melted ⓘ
- fresh dill sprigs (optional) ⓘ
Instructions
- Place tomato slices in a 13 x 9 x 2-inch baking dish coated with cooking spray. Arrange fillets on top of tomatoes.
- Combine bread crumbs, grated Parmesan cheese, chopped fresh dill, salt, white pepper, and ground red pepper in a bowl.
- Stir in melted margarine until well combined.
- Sprinkle the bread crumb mixture evenly over the fillets.
- Bake at 425°F for 13 minutes or until the fish flakes easily when tested with a fork.
- Garnish with fresh dill sprigs, if desired.
