Ingredients

  • 1 1/2 cups sifted cake flour
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons cream of tartar
  • 2 cups sugar
  • 1 1/2 cups egg whites
  • 1 1/2 teaspoons vanilla
  • 1 teaspoon almond flavoring

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Combine 1 1/2 cups sifted cake flour and 1/2 teaspoon salt.
  3. Sift together the flour mixture four times and set aside.
  4. Sift 1 cup sugar four times and set aside over waxed paper.
  5. In a clean bowl, beat 1 1/2 cups egg whites until foamy.
  6. Add 1 1/2 teaspoons cream of tartar and continue beating until soft peaks form.
  7. Gradually add the 1 cup of sugar while beating until stiff peaks form.
  8. Mix in 1 1/2 teaspoons vanilla and 1 teaspoon almond flavoring.
  9. Gently fold in the flour mixture in small portions until fully incorporated.
  10. Pour batter into an ungreased angel food cake pan.
  11. Bake in preheated oven for approximately 35 minutes or until the top is golden and a toothpick inserted comes out clean.
  12. Invert the pan and let the cake cool completely before removing.
