Ingredients

  • 2 skinless, boneless chicken breasts
  • 3 Tbsp. mayonnaise
  • 1/2 cup celery, diced
  • juice of 1 lemon
  • about 1 Tbsp. soy sauce
  • about 1 tsp. curry powder
  • 1/2 cup cashews

Instructions

  1. Poach the chicken breasts until cooked through.
  2. Cut the cooked chicken into bite-sized pieces.
  3. Mix mayonnaise, lemon juice, soy sauce, and curry powder in a bowl.
  4. Add the chicken pieces and diced celery to the dressing and chill.
  5. Just before serving, add cashews and adjust dressing to taste.
  6. Serve on lettuce leaves.
