Ingredients

  • 2 cans Shoe Peg corn, drained and rinsed
  • 1 (2 oz.) jar pimento
  • 1/2 cup chopped green peppers
  • 1/2 cup chopped purple onion
  • 1/2 cup chopped celery
  • 1/2 cup sugar
  • 1/2 cup oil (Wesson)
  • 1/2 cup white vinegar
  • dash of pepper

Instructions

  1. Heat sugar, oil, and vinegar in a saucepan to boiling point or until dissolved.
  2. Stir all ingredients together in a bowl.
  3. Refrigerate the mixture for at least several hours before serving.
  4. Will keep for 1 or 2 weeks.
