Ingredients

  • 6 slices dry bread
  • 1/2 cup raisins
  • 1/4 cup bran
  • 2 eggs
  • 6 tablespoons sugar
  • 1/2 teaspoon nutmeg
  • 2 cups milk
  • 1 teaspoon vanilla

Instructions

  1. Remove crusts from bread slices and spread with butter.
  2. Cut bread into squares and arrange in layers in a greased 8-inch baking dish. Sprinkle each layer with raisins and bran.
  3. Beat egg yolks until smooth.
  4. Add 2 tablespoons of sugar, nutmeg, milk, and vanilla; mix thoroughly.
  5. Pour the egg mixture over the bread layers.
  6. Bake in a preheated oven at 350°F (175°C) for about 35 minutes.
  7. In the meantime, beat egg whites until stiff peaks form, gradually adding the remaining sugar to make a meringue.
  8. Spread the meringue over the baked pudding and return to the oven.
  9. Bake in a slow oven at 300°F (150°C) for about 20 minutes or until meringue is lightly browned.
