  • pepper
  • 1 (6 oz.) can mushrooms
  • 1/2 lb. bacon strips

Instructions

  1. Cover the bottom of a deep 2 1/2-quart casserole dish with cooked and drained broccoli.
  2. Layer the sliced Bermuda onion, halved and skinned chicken breasts, salt and pepper, canned mushrooms, cooked bacon strips, and shredded Cheddar cheese over the broccoli.
  3. Cover the casserole with foil and bake at 450°F for 45 minutes.
  4. Remove the foil, reduce the oven temperature to 375°F, and bake for an additional 45 minutes.

Tips & Substitutions

For a richer flavor, consider adding garlic or herbs like thyme or rosemary to the casserole layers. If you're short on time, pre-cooked bacon can be a great substitute for raw bacon strips. You can also use frozen broccoli instead of fresh; just ensure it's thawed and drained well before layering. For a twist, try adding a layer of shredded cheese like Monterey Jack or even a sprinkle of Parmesan.

Serving Suggestions

This casserole pairs beautifully with a fresh green salad or crusty bread to soak up the flavors. For a complete meal, consider serving it alongside New Potatoes Fried Whole. A light vinaigrette can balance the richness of the dish, making it a delightful option for family dinners or gatherings.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place the casserole in a preheated oven at 350°F until warmed through, about 20-25 minutes. You can also microwave individual portions, but be sure to cover them to retain moisture.
