Ingredients

  • 2 tbsp. olive oil
  • 1 medium onion, finely chopped
  • 1 clove of garlic, finely chopped
  • 8-10 plum tomatoes, halved lengthwise
  • 2 tbsp. chopped parsley
  • salt and pepper

Instructions

  1. 1. Preheat oven to 350
  2. 2. Layer in a baking dish in the following order: olive oil, onion, garlic, tomatoes, parsley and salt and pepper. Bake for about 45 minutes to 1 hour
