Ingredients

  • 4 cups thinly sliced unpeeled cucumbers
  • 2 cups thinly sliced onions
  • 1 tablespoon salt
  • 1 cup water
  • 1 small hot chili pepper (optional)
  • 1 cup sugar
  • 1/2 cup cider vinegar

Instructions

  1. In a large bowl, combine thinly sliced cucumbers, sliced onions, salt, and water.
  2. Let stand for 2 hours.
  3. Drain the liquid and squeeze the vegetables by handfuls to extract more moisture.
  4. Add remaining ingredients and stir until sugar is dissolved.
  5. Spoon into freezer containers.
  6. Cover tightly and freeze at least overnight.
  7. Thaw for 4 hours before serving.
