Freezer Date Cookies

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup pitted dates, chopped
  • 1 cup shredded coconut
  • 1 cup walnuts, chopped

Instructions

  1. With an electric mixer, beat butter, egg and vanilla until smooth.
  2. In separate bowl, whisk together flour, baking powder and salt.
  3. Gradually add flour mixture to butter mixture, beating until blended.
  4. Stir in dates, coconut and walnuts.
  5. Form dough into two 1-1/2-inch rolls; wrap in wax paper or foil.
  6. Chill in freezer until firm enough to slice easily (about 2 hours) or for as long as 1 month.
  7. When ready to make, preheat oven to 350 degrees Fahrenheit.
  8. Lightly grease several cookie sheets.
  9. With sharp knife, cut rolls into 3/8-inch slices.
  10. Place slices on prepared cookie sheets.
  11. Bake about 12 minutes or until golden.
  12. Cool on wire rack.
