Ingredients

  • 1 cup sour cream
  • 1 cup sugar
  • 1 cup cake flour
  • 3 or 4 oz. can coconut
  • 4 Tbsp. butter
  • 1 egg
  • 1 tsp. baking soda

Instructions

  1. Cream butter and sugar; add egg and sour cream.
  2. Mix in dry ingredients except coconut.
  3. Grease an 8-inch tube pan or square pan.
  4. Line the bottom of the pan with all the coconut and pour in the batter.
  5. Sprinkle the top with sugar and cinnamon.
  6. Bake at 350°F for 30 minutes.
