Ingredients

  • 1 lemon
  • 1/2 cup granulated sugar
  • 1 stick (4 oz.) unsalted butter
  • 2 large eggs
  • 1 cup less 2 tablespoons flour
  • 1 teaspoon baking powder
  • 1/2 cup confectioners sugar

Instructions

  1. Preheat oven to 325°F and adjust rack to the center position.
  2. Butter and flour an 8-inch round cake pan.
  3. Grate lemon peel and mix with sugar; add butter and beat until smooth.
  4. Add eggs and beat until well blended.
  5. Mix baking powder with flour and add to the mixture, then beat until just combined.
  6. Do not overstir the batter.
  7. Pour the batter into the prepared pan and bake for about 25 minutes until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool slightly in the pan before removing.
