- Chop or break the semi-sweet chocolate into medium-sized pieces.
- Place the chocolate in the top of a small double boiler over hot water on low heat.
- Cover and let stand until the chocolate is partially melted.
- Uncover and stir until the chocolate is completely melted.
- Remove the top of the double boiler temporarily from heat.
- Add the butter, a few pieces at a time, and stir with a small wire whisk until smooth.
- Stir in the peppermint extract or rum until well combined.
- Chill the mixture in the refrigerator until firm enough to handle, about 1-2 hours.
- Shape the chilled mixture into small balls using a teaspoon or melon baller.
- Roll each ball in unsweetened cocoa powder to coat thoroughly.
