Ingredients

  • 6 oz. semi-sweet chocolate
  • 2 oz. sweet butter
  • 2 egg yolks
  • 1/4 tsp. peppermint extract
  • 1/4 c. rum
  • unsweetened cocoa powder

Instructions

  1. Chop or break the semi-sweet chocolate into medium-sized pieces.
  2. Place the chocolate in the top of a small double boiler over hot water on low heat.
  3. Cover and let stand until the chocolate is partially melted.
  4. Uncover and stir until the chocolate is completely melted.
  5. Remove the top of the double boiler temporarily from heat.
  6. Add the butter, a few pieces at a time, and stir with a small wire whisk until smooth.
  7. Stir in the peppermint extract or rum until well combined.
  8. Chill the mixture in the refrigerator until firm enough to handle, about 1-2 hours.
  9. Shape the chilled mixture into small balls using a teaspoon or melon baller.
  10. Roll each ball in unsweetened cocoa powder to coat thoroughly.
