Ingredients

  • 1 large or 2 small coconuts, grated
  • 1 1/2 cups sugar
  • 1/2 cup water or fresh coconut juice
  • 2 egg whites

Instructions

  1. Cook water and sugar until it threads, about 8 minutes.
  2. Beat egg whites until stiff. Add 2 tablespoons sugar to egg whites.
  3. Pour the cooked sugar syrup over the beaten egg whites and beat until well combined.
  4. Add 1 teaspoon vanilla extract.
  5. Use 2 packages of frozen coconut if fresh coconut is not available.
  6. Optional: One large can drained crushed pineapple may be substituted for the coconut for pineapple frosting.
