- Cook water and sugar until it threads, about 8 minutes.
- Beat egg whites until stiff. Add 2 tablespoons sugar to egg whites.
- Pour the cooked sugar syrup over the beaten egg whites and beat until well combined.
- Add 1 teaspoon vanilla extract.
- Use 2 packages of frozen coconut if fresh coconut is not available.
- Optional: One large can drained crushed pineapple may be substituted for the coconut for pineapple frosting.
