Ingredients

  • 1 cup grated corn
  • 1 cup flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 3 tablespoons sugar
  • 3 tablespoons non-dairy creamer
  • 1 egg

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine grated corn, flour, baking powder, salt, and sugar.
  3. Add non-dairy creamer and egg to the dry ingredients and mix until well combined.
  4. Pour the batter into a greased baking dish.
  5. Bake for 20 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  6. Allow to cool slightly before serving.
