Microwave Butterscotch Pie

- In a glass mixing bowl, combine brown sugar, water, and butter; microwave on High for 30 seconds until it starts to bubble.
- Stir the mixture well. Make a paste of flour, cornstarch, and a little milk.
- Add the flour mixture to the sugar mixture and combine using a wire whisk; then add the rest of the milk and beaten egg yolks and mix well.
- Microwave the mixture on High for 4 minutes; whisk well after cooking.
- Return to microwave and cook for another 3 minutes.
- If the filling is not thick enough, cook for an additional minute.
- Cover the filling with plastic wrap and cool for 15 to 20 minutes.
- Stir the filling again, then pour into the baked pie shell.
- Serve topped with whipped topping.
