Ingredients

  • 1 (9-inch) baked pie shell
  • 1 cup brown sugar
  • 1 teaspoon water
  • 1/2 stick oleo or butter
  • 2 cups milk
  • 1 tablespoon cornstarch
  • 3 1/2 tablespoons flour
  • 2 egg yolks, beaten
  • whipped topping

Instructions

  1. In a glass mixing bowl, combine brown sugar, water, and butter; microwave on High for 30 seconds until it starts to bubble.
  2. Stir the mixture well. Make a paste of flour, cornstarch, and a little milk.
  3. Add the flour mixture to the sugar mixture and combine using a wire whisk; then add the rest of the milk and beaten egg yolks and mix well.
  4. Microwave the mixture on High for 4 minutes; whisk well after cooking.
  5. Return to microwave and cook for another 3 minutes.
  6. If the filling is not thick enough, cook for an additional minute.
  7. Cover the filling with plastic wrap and cool for 15 to 20 minutes.
  8. Stir the filling again, then pour into the baked pie shell.
  9. Serve topped with whipped topping.
