Ingredients

  • 2 cups sugar
  • 1 1/2 cups canola oil
  • 4 eggs
  • 2 cups flour
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 3 cups grated raw carrots
  • 1 cup chopped nuts
  • 1 cup golden raisins
  • 1 teaspoon grated orange rind
  • 1 teaspoon almond extract

Instructions

  1. Cream together sugar, canola oil, and eggs until well combined.
  2. Sift together flour, salt, cinnamon, and baking soda; gradually mix into the creamed mixture.
  3. Add grated raw carrots, chopped nuts, golden raisins, grated orange rind, and almond extract; mix until evenly incorporated.
  4. Pour batter into a Pam-sprayed angel food cake pan.
  5. Bake at 350°F for 1 hour and 15 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow to cool before removing from the pan and serving.
