Ingredients

  • 8 ears fresh corn or 2 (10 oz.) packages frozen corn
  • 1/2 cup butter or margarine
  • 1 cup onion rings
  • 1/2 cup green pepper rings
  • 1 1/2 teaspoons salt or herbal salt substitute
  • 1/4 teaspoon dried oregano
  • 1/2 cup sour cream
  • 2 tomatoes, sliced or wedged

Instructions

  1. Cut corn from the cob or use frozen corn.
  2. Heat butter in a large skillet.
  3. Add corn, onion rings, green pepper rings, and oregano to the skillet.
  4. Cover and cook for 6 to 7 minutes until tender, stirring and shaking occasionally.
  5. Add salt, sour cream, and tomato slices or wedges.
  6. Cook only until tomatoes are hot, not mushy, and serve.
