- Combine flour, baking soda, and salt in a bowl.
- Beat grated fresh ginger, room temperature butter, and 1 cup of sugar until light and fluffy.
- Beat in molasses and egg until well combined.
- Gradually beat in the flour mixture until just combined.
- Chill the dough for at least 1 hour.
- Preheat oven to 350°F (175°C).
- Roll dough into 1 1/2-inch balls and then roll in sugar.
- Place cookies 2 inches apart on ungreased baking sheets.
- Bake until edges start to brown, about 15 minutes.
- Let cookies stand on baking sheets for 1 minute, then transfer to racks to cool completely.
