Ingredients

  • 2 1/4 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons grated fresh ginger
  • 12 tablespoons room temperature butter
  • 1 cup sugar
  • 1/4 cup molasses
  • 1 egg

Instructions

  1. Combine flour, baking soda, and salt in a bowl.
  2. Beat grated fresh ginger, room temperature butter, and 1 cup of sugar until light and fluffy.
  3. Beat in molasses and egg until well combined.
  4. Gradually beat in the flour mixture until just combined.
  5. Chill the dough for at least 1 hour.
  6. Preheat oven to 350°F (175°C).
  7. Roll dough into 1 1/2-inch balls and then roll in sugar.
  8. Place cookies 2 inches apart on ungreased baking sheets.
  9. Bake until edges start to brown, about 15 minutes.
  10. Let cookies stand on baking sheets for 1 minute, then transfer to racks to cool completely.
