Fresh Mango Chutney

Ingredients

  • 6 mangoes, peeled and chopped
  • 8 to 10 cloves garlic, peeled and sliced
  • 1-inch piece fresh ginger root, peeled and chopped
  • 1 cup light brown sugar, packed
  • salt to taste
  • 1 teaspoon ground dried red chilies or to taste
  • 1 cup cider vinegar

Instructions

  1. Thinly slice the mangoes and place in a bowl with remaining ingredients.
  2. Mix thoroughly.
  3. Transfer to a saucepan and bring to a boil.
  4. Reduce heat to low and simmer for 30 to 40 minutes.
  5. Stir occasionally so that mixture does not stick.
  6. Let cool before serving.
