Ingredients

  • 2 1/4 cups sifted cake flour
  • 1 1/2 cups sugar
  • 1/4 teaspoon salt
  • 3 teaspoons baking powder
  • 1/2 cup Crisco oil
  • 5 egg yolks
  • Juice of 2 oranges and enough water to make 3/4 cup
  • 2 tablespoons grated orange peel
  • 1 cup egg whites (7 to 8 eggs)

Instructions

  1. Sift the cake flour thoroughly.
  2. Measure lightly into a cup and sift again with sugar, salt, and baking powder.
  3. Make a well in the center and slowly add the oil, blending well.
  4. Add egg yolks, one at a time, stirring until well mixed.
  5. Add orange juice and grated orange peel, then beat with a spoon until the mixture is smooth.
  6. Beat egg whites with cream of tartar until stiff peaks form.
  7. Gently fold the beaten egg whites into the yolk mixture, blending carefully.
  8. Pour the batter into an ungreased 9-inch tube pan.
  9. Bake in a preheated 325°F (160°C) oven for 50 to 60 minutes until a toothpick inserted in the center comes out clean.
