Ingredients

  • 2 lb. fresh shrimp
  • 2 qt. water
  • juice of 1 lemon or 2 Tbsp. vinegar
  • 1 Tbsp. caraway seed
  • 1 Tbsp. salt
  • 6 peppercorns
  • 1 stalk celery

Instructions

  1. Place water, lemon juice or vinegar, caraway seed, salt, peppercorns, and celery in a saucepan.
  2. Heat the mixture to simmering point.
  3. Wash the shrimp thoroughly, then drop them into the broth and simmer for 12 to 15 minutes.
  4. Allow the shrimp to cool in the broth or remove and let them cool separately.
  5. Remove the shrimp, shell them, and take out the back vein of each shrimp.
  6. Chilled shrimp can be served in salads, cocktails, or dipped in batter to be French fried.
