Instructions

  1. Roast the red bell pepper: halve, core, and seed the pepper.
  2. Flatten the pepper with your hand and place, skin side up, on foil on a baking sheet.
  3. Broil about 3 inches from the heat until the skins blacken and are charred.
  4. Remove to a paper bag and close for 15 minutes to steam.
  5. Rub off the charred skin from the pepper and set aside.
  6. In a small bowl, combine 1 Tbsp. white wine, 2 Tbsp. plus 1 tsp. olive oil, and minced garlic; season with salt and pepper.
  7. Rub the tuna steak with some of the garlic mixture and season with salt and pepper.
  8. Heat 2 Tbsp. olive oil in a skillet over medium-high heat.
  9. Cook the tuna steak for about 3-4 minutes per side until desired doneness, then remove and let rest.
  10. Slice the French bread rolls lengthwise and toast lightly if desired.
  11. Spread some garlic olive oil mixture on the bread.
  12. Top each roll with thin slices of red onion, blanched string beans, tomato slices, roasted red pepper, and sliced tuna.
  13. Sprinkle chopped parsley over the filling, close the rolls, and serve.
