Ingredients

  • 2 cups flour
  • 1/3 cup Cream of Wheat
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 banana
  • 2/3 cup sugar
  • oil (enough to deep fry)

Instructions

  1. Mash the banana in a mixing bowl.
  2. Add flour, Cream of Wheat, baking powder, salt, and sugar to the mashed banana and mix well.
  3. Gradually add water little by little, mixing until you get a batter as thick as a muffin batter.
  4. Heat oil in a deep fryer or large pot over medium heat.
  5. Drop spoonfuls of batter into the hot oil and fry until golden brown on one side.
  6. Turn the fried banana bread pieces over and fry the other side until golden brown.
  7. Remove from oil and drain on paper towels before serving.
