Fried Bows

- Beat the eggs in a large bowl.
- Add sugar, oil, vanilla, and salt to the eggs and mix well.
- Make a mound of flour on a clean surface and create a well in the center.
- Pour the egg mixture into the well and knead until smooth, adding more or less flour as needed.
- Roll small portions of dough about 3 inches wide, very thin.
- Cut the rolled dough into 3-inch rectangles.
- Cut a slit in the center of each rectangle, then pull one end through the slit to form a bow shape.
- Deep fry the bows until they are a light tan color, then remove and drain on paper towels.
- Sprinkle with powdered sugar before serving. These can be made ahead and stored for a few weeks.
