Ingredients

  • 2 pounds chitterlings
  • 1 tablespoon whole cloves
  • 1 red pepper, chopped
  • 1 egg
  • 1 tablespoon water cracker crumbs

Instructions

  1. Wash chitterlings thoroughly and cover with boiling salted water.
  2. Add cloves and red pepper. Cook until tender.
  3. Drain the chitterlings.
  4. Cut the chitterlings into pieces approximately the size of an oyster.
  5. Dip each piece in beaten egg mixed with water, then coat with water cracker crumbs.
  6. Fry in hot deep fat until brown.
