Ingredients

  • 3 to 4 medium squash or zucchini
  • 1 to 2 onions (optional)
  • salt and pepper as desired
  • 2 eggs
  • 1/4 cup flour
  • 1/8 teaspoon oregano (optional)
  • 1/8 teaspoon basil (optional)
  • 2 to 3 tablespoons oil

Instructions

  1. Grate the raw squash and onions and mix with the remaining ingredients, except the oil.
  2. Heat the oil in a frying pan and drop the mixture by rounded tablespoonfuls into the oil.
  3. Cook until the cakes reach desired brownness, turning as needed.
