Instructions

  1. Beat eggs with salt and pepper according to the amount of vegetables you are going to use.
  2. Wash and drain vegetables until dry.
  3. Dip vegetables into the beaten egg mixture.
  4. Mix cornmeal and flour in a Ziploc or grocery bag (3/4 cup cornmeal to 1/4 cup flour).
  5. Drop the egg-coated vegetables into the cornmeal/flour mixture and coat thoroughly.
  6. Fry the coated vegetables in nonfat cooking oil until golden brown.
