- Beat eggs with salt and pepper according to the amount of vegetables you are going to use.
- Wash and drain vegetables until dry.
- Dip vegetables into the beaten egg mixture.
- Mix cornmeal and flour in a Ziploc or grocery bag (3/4 cup cornmeal to 1/4 cup flour).
- Drop the egg-coated vegetables into the cornmeal/flour mixture and coat thoroughly.
- Fry the coated vegetables in nonfat cooking oil until golden brown.
