Ingredients

  • 3 egg yolks
  • 1/4 lb. butter or oleo
  • 1 cup sugar
  • 1 package lemon jello
  • 1/3 cup hot water
  • 1 small can crushed pineapple, drained
  • 1 cup chopped nuts (optional)
  • 3 egg whites
  • vanilla wafers

Instructions

  1. Cream together egg yolks, butter, and sugar for 15 minutes.
  2. Dissolve lemon jello in hot water.
  3. Add dissolved jello to the sugar mixture.
  4. Stir in drained crushed pineapple.
  5. Add chopped nuts if desired.
  6. Beat egg whites stiff and fold into the mixture.
  7. Crush vanilla wafers into crumbs.
  8. Cover the bottom of a dish with half of the wafer crumbs.
  9. Pour the mixture over the crumbs and spread remaining crumbs over the top.
  10. Let stand overnight before serving with or without whipped cream.
