Ingredients

  • 2 cucumbers
  • 1 bar cream cheese (room temperature)
  • 1/4 cup green pepper, diced
  • 1/4 cup red pepper, diced
  • 1/4 cup yellow pepper, diced
  • 1 tablespoon onion, diced
  • 1/2 teaspoon paprika

Instructions

  1. Slice cucumbers in half and scoop out the seeds.
  2. Salt the cucumber halves and turn them over on paper towels to drain excess moisture.
  3. Mix cream cheese, green pepper, red pepper, yellow pepper, onion, and paprika together in a bowl.
  4. Stuff the mixture into the hollowed-out cucumber halves.
  5. Wrap each stuffed cucumber in foil and refrigerate overnight.
  6. Slice and serve as a salad or hors d'oeuvre.
