Ingredients

  • 8 cups dried pinto beans
  • 8 onions, finely chopped
  • 8 cloves garlic, minced
  • 3 bay leaves
  • 4 teaspoons crushed red pepper
  • 1/2 cup salad oil
  • 2 teaspoons salt
  • 1/4 teaspoon black pepper
  • 4 fresh tomatoes, chopped

Instructions

  1. Rinse and pick over the dried pinto beans, then place them in a large stock pot. Add enough cold water to cover the beans.
  2. Add half of the chopped onions, half of the minced garlic, bay leaves, and crushed red pepper to the pot.
  3. Cover and bring to a boil, then reduce heat and simmer for 1 hour.
  4. Add 4 tablespoons of salad oil and salt, stirring to mix well.
  5. Cover and continue cooking until the beans are soft, adding more water as necessary.
  6. Uncover and cook for another 30 minutes.
