Ingredients

  • 2 cups pinto beans
  • 6 cups water
  • 2 pounds soup bones
  • 1 stalk celery, chopped
  • 1/2 cup chopped onion
  • 3 peppercorns
  • 1 teaspoon salt
  • 1 can stewed tomatoes
  • 1 can whole tomatoes
  • green chilies
  • 1 teaspoon chili powder

Instructions

  1. Soak pinto beans in water for 3 hours.
  2. Simmer soup bones, chopped celery, chopped onion, peppercorns, and salt with the soaked beans for 3 hours.
  3. Remove bones from the soup.
  4. Add stewed tomatoes, whole tomatoes, green chilies, and chili powder to the soup.
  5. Simmer for an additional 2 hours.
  6. Serve the soup in bowls with crumbled Doritos or Fritos at the bottom and top with grated mozzarella cheese.
