Frozen Mint Salad

A refreshing frozen mint salad combining pineapple, lime, marshmallows, and mint candies, perfect for summer gatherings or as a cool, sweet side dish for guests.

Ingredients

  • 2 (13 1/2 oz.) cans crushed pineapple
  • 1 small package lime Jell-O
  • 10 1/2 oz. package mini-marshmallows
  • 1 package Vernells butter mints
  • 1 pint whipping cream

Instructions

  1. Mix crushed pineapple with juice, lime Jell-O, and marshmallows and let stand overnight.
  2. Next morning, crush the Vernells butter mints finely and add to the Jell-O mixture.
  3. Whip the whipping cream and fold it into the mixture.
  4. Pour into a 13 x 9 x 2-inch pan or place in a Jell-O mold.
  5. Freeze until firm.
  6. Keep in the freezer when not serving.
