Frozen Pineapple-Lemon Pie

Ingredients

  • 20 oz. can crushed pineapple in heavy syrup
  • 8 oz. container frozen nondairy whipped topping, thawed
  • 1/2 cup chopped walnuts
  • grated peel from 1 lemon
  • 2 teaspoons lemon juice

Instructions

  1. Drain pineapple and reserve 1 tablespoon of juice.
  2. In a large mixing bowl, combine the crushed pineapple, thawed nondairy whipped topping, chopped walnuts, grated lemon peel, lemon juice, and reserved pineapple juice.
  3. Stir together until well blended.
  4. Spoon the mixture into a prepared crust.
  5. Cover well and freeze until firm or overnight.
  6. Let stand at room temperature for 10 minutes before serving.
