- Cream together well shortening and sugar.
- Beat in a small amount of egg substitute at a time.
- Beat these three ingredients together until the mixture is light and fluffy.
- Add mashed bananas and vanilla flavoring, beating well again.
- In a separate bowl, mix together the plain flour, salt and soda.
- If you are using self-rising flour, leave out the salt and soda.
- Add and beat the flour mixture to the other mixture, a little at a time. After getting these mixed well, blend in dates, nuts and oatmeal.
