Ingredients

  • 3/4 c. shortening
  • 1 1/2 c. light brown sugar
  • 1 c. egg substitute
  • 4 very ripe mashed bananas
  • 2 tsp. vanilla flavoring
  • 2 c. sifted plain flour
  • 1 1/2 tsp. salt
  • 1 1/2 tsp. soda
  • 1 c. chopped dates
  • 1 c. walnut pieces
  • 1 c. quick cooking oatmeal

Instructions

  1. Cream together well shortening and sugar.
  2. Beat in a small amount of egg substitute at a time.
  3. Beat these three ingredients together until the mixture is light and fluffy.
  4. Add mashed bananas and vanilla flavoring, beating well again.
  5. In a separate bowl, mix together the plain flour, salt and soda.
  6. If you are using self-rising flour, leave out the salt and soda.
  7. Add and beat the flour mixture to the other mixture, a little at a time. After getting these mixed well, blend in dates, nuts and oatmeal.
