Ingredients

  • 6 oz dried apricots, halved
  • 6 oz pitted dates, chopped
  • 1 cup raisins
  • 1 1/4 cups walnut pieces
  • 2 cups orange juice
  • 1 tsp baking soda
  • 3/4 cup brown sugar
  • 2 None large eggs, lightly beaten
  • 2 1/4 cups self-rising flour
  • 1/2 tsp ground cinnamon

Instructions

  1. Preheat oven to 350°F. Lightly grease and line 2 (8x4 inch) loaf pans with parchment paper.
  2. In a medium saucepan, combine dried fruit, walnuts and orange juice. Stir over low heat until simmering. Cook for 5-6 mins, stirring occasionally, until liquid has almost been absorbed. Stir in baking soda then transfer to a large bowl. Whisk together sugar and eggs then add to fruit mixture. Stir in flour and spices until just combined. Transfer to prepared pans and bake for 30-35 mins, until a skewer inserted in the center comes out clean.
  3. Let bread cool in pans for 10 mins then transfer to a wire rack to cool completely. Serve sliced.
