Ingredients

  • 2 cups cooked rice
  • 1 cup drained unsweetened crushed pineapple
  • 1/4 cup raisins
  • 1 tablespoon vanilla
  • 1/2 cup frozen orange concentrate
  • 1 banana

Instructions

  1. Mix cooked rice, drained crushed pineapple, and raisins in a bowl.
  2. Whiz remaining ingredients (frozen orange concentrate, vanilla, banana) in a blender until smooth.
  3. Add the blended mixture to the rice mixture and stir well.
  4. Pour the mixture into an 8-inch square baking dish.
  5. Cover with foil.
  6. Bake at 350°F (175°C) for 30 minutes.
  7. Serve hot or cold.
