Ingredients

  • 3/4 cup flour
  • 1 teaspoon baking powder
  • 1/2 cup milk
  • 3/4 cup boiling water
  • 3 cups sliced fruit or berries
  • 1/2 cup sugar
  • 1/8 teaspoon soda
  • 1/4 cup shortening
  • 1/2 cup honey

Instructions

  1. Mix the flour, baking powder, and soda in a bowl.
  2. Cream the shortening in a separate bowl.
  3. Gradually add sugar to the shortening and beat until light and fluffy.
  4. Add part of the honey to the creamed mixture.
  5. Alternately add the flour mixture and remaining honey, mixing well after each addition.
  6. Pour the batter into a greased baking dish.
  7. Arrange the sliced fruit or berries on top of the batter.
  8. Sprinkle with the remaining honey and 1/4 cup sugar, then dot with small pieces of butter.
  9. Pour boiling water evenly over the top.
  10. Bake at 400°F until the cobbler is golden and a toothpick inserted in the batter comes out clean.
