Fruit Cake Cups
Ingredients
- 15 oz. golden raisins (2 1/2 c.) ⓘ
- 1 c. frozen orange juice ⓘ
- 1/2 c. margarine ⓘ
- 1 c. orange marmalade ⓘ
- 1/4 c. brandy or bourbon (optional) or more orange juice ⓘ
- 1 large egg, beaten ⓘ
- 1 c. nuts ⓘ
- 2 c. candied chopped fruit ⓘ
- 2 c. sifted flour ⓘ
- 1 tsp. salt ⓘ
- 1/2 tsp. soda
- 1/2 tsp. nutmeg ⓘ
- 1 tsp. cinnamon ⓘ
Instructions
- Mix together raisins, margarine and orange juice.
- Simmer 10 minutes.
- Cool and add marmalade.
- Mix in other liquid, egg, nuts and fruit.
- Sift together dry ingredients and fold in last.
- Add cherries and nuts for garnish (optional).
- Cook in small muffin tins at 300° for 30 minutes or more depending on size of tins. Makes 18 to 36.
- Fill tins 2/3 to 3/4 full.
- Store tightly covered in tin or plastic container.
- Keeps well.
